Black Bean Taco Salad

Dressing:

1/4 c. tomatoes
1/4 c. cilantro
2 Tbsp. olive oil
1 Tbsp. apple cider vinegar
1 tsp. grated lime rind
1 Tbsp. lime juice
1/4 tsp. EACH salt, pepper, chili powder, cumin
1 clove garlic

Blend all ingredients until smooth.

Salad:

8 c. lettuce, thinly sliced
2 grilled chicken breasts, diced
1 c. chopped tomatoes
1 c. red or green bell pepper
1/2 c. chopped green onion
1/2 c. frozen corn
1 avocado, diced
1/2 c. shredded cheese (opt)
1 can black beans, rinsed
2 c. crushed tortilla chips

Combine lettuce, chicken, veggies and beans. Pour dressing over salad and toss well to coat. Sprinkle with tortilla chips and serve.
