Magic Pizza Crust
2 c. cauliflower (measured after its steamed and mashed)
2 eggs
2 c. shredded mozzarella cheese
Steam the cauliflower then mash it up with a potato
masher (or you can grate it by hand or in a food processor). This is
called ricing (you don't want it to be a puree). Then add the eggs and
cheese and spread it on a greased cookie sheet or Pizza pan. Optionally, you could
add in some italian seasoning or garlic. Bake at 450 for 15-20 minutes,
until golden brown on the edges. Then add your sauce and toppings and
put back in oven just to melt the cheese. Yum! Recipe from Kelli Green
We tried this recipe and my kids devoured both pizzas. No leftovers. I didn't spill the beans about the cauliflower til they had already eaten a couple of pieces. :) We doubled the recipe and made two pizzas and also made a salad to go with it. It fed all 6 of us. Enjoy!
